During fasting, we do not consume food of animal origin such as meat, fish, dairy and eggs, while foods such as cereals, legumes, fruits, vegetables, molluscs and shellfish are allowed.
However, during this period, there are several cases of gastroenteritis after eating shellfish, which is increasing during Lent.
This is mainly because viruses such as the noodle, which have been internationally associated with the appearance of gastroenteritis epidemics after consumption of free/raw shellfish (mussels, oysters, etc.), are resistant, both in steamed and at 60 ° C.
To protect citizens, EDY provides some useful guidelines to safely consume seafood and shellfish in general:
- When the shell is open before cooking or when it remains closed after it, then, prefer to reject the shellfish.
- The acidity control done by throwing lemon drops does not ensure that the shellfish are free from germs.
- Do not consume raw or freely cooked shellfish. For this reason, make sure you boil until the shell is opened and continue boiling for another 3-5 minutes.
- Alternatively, you can place them on steam coasts when steam has already begun, and cook for an additional 4-9 minutes.
For cooking the crumb:
- Boil at least 3 minutes
- fry at least 3 minutes at 190 ° C
- Bake on the grill for 3 minutes
- Bake in the oven at 230 ° C for 10 minutes
At the same time, be sure to always adhere to the basic hygiene rules. Which means you should wash your hands well before and after handling raw shellfish, but also keep cutting surfaces and household utensils, clean.
To reduce the chances of crossing contamination, keep raw shellfish away from fresh fruits, vegetables and other foods eaten raw or ready to eat.
Finally, make sure you store seafood/shellfish safely. If they are to be consumed within two days of their purchase, they are recommended to store them in the refrigerator maintenance. If they are to be consumed over more than two days, they are recommended to store them in the freezer after they are placed in food bags.
