In recent decades the increase in allergies internationally has been rapid as figures according to figures, about 30% of the world’s population suffers from some kind of allergy, while 1% of the European Union population has some food allergy. This translates into about 4.5 million people!
Substances that cause most often allergies
There are specific substances and products that can cause more often allergies or intolerance. These are the cereals that contain gluten, the milk, the eggs, the nutsthe peanuts, or soy, the fish, the soften, the molluscs, the celery, Lupine, sesame, mustard and sulfur.
All of these foods contain an otherwise harmless protein, called an allergen which is capable of causing an allergic reaction to some people.

Allergies can be caused by certain ingredients or substances, which may vary from region to region and vary according to cultural differences in the diet and the genetic predisposition of people who risk their health. Even a very small amount of such an ingredient or substance can cause an allergic reaction such as some rash or even anaphylaxis.
Every man may not know that he is allergic In some food or in a substance contained in it, and it is very likely that there will be a food that until some time ago consumed normally, suddenly causing an allergy.
What is the right way to deal with them?
The only way to manage the situation someone suffering from an allergy is to know what is allergic. If you are suffering from an allergy, it is advisable to inform the staff you are serving in your restaurant or hotel, and if you are a business manager these are some steps that you can take before applying the preventive note for the possible presence of allergens:

- Remove or replace allergens.
- Determine intersecting contact points with allergens.
- Separate allergenic ingredients.
- Clean the intersecting points of contact allergens.
